Vegan spelled cous cous with colorful vegetables

Ingredients for 4 people:

150gr of spelled cous cous
180gr of water
2 tablespoons of extra virgin olive oil
A little bit of salt
½ red pepper
1 small zucchini
1 medium carrot
¼ of purple cabbage

The cous cous is a typical food of North Africa, western Sicily and south-west Sardinia based on durum wheat flour.

Today this name also refers to foods prepared with different cereals, such as barley, millet, sorghum, rice, spelled or corn.

I thought of coloring this dish with vegetables that we find easily at this time of year, including the purple cabbage that gives a touch of color and texture. About the purple cabbage I prefer to add it raw at the end to prevent, during cooking, to release your typical purple color given off by the cooking water.

We can also add some fresh basil and chives!

We proceed:

We wash the vegetables well. Cut the red pepper, carrots and zucchini into cubes. Let’s cook quickly over medium heat in a pan with extra virgin olive oil and a little salt.

Cut the cabbage into thin strips and season with a little oil and salt.

Let’s heat the water with a little oil and salt. In a bowl, pour the hot water and the quantity of spelled couscous. With a fork turn to prevent lumps from forming. Leave it in hot water for 5-6 minutes and then drain and transfer to a larger bowl adding the freshly sautéed diced vegetables and the raw purple cabbage.
