Ingredients: Serves 7
1 liter of water
50g of onion
8 grams of agar-agar
Extra virgin olive oil
Whole sea salt
A bit of black pepper
Pour in a pot a liter of water and 500g of peas. Cook for about twenty minutes on a medium-high flame.
In a pan, stir-fry the chopped onion for a few minutes. As soon as the peas are cooked, drain them and blend them adding some cooking water. Weigh this creamy mixture and make sure it is 1 liter. If not, add some more water.
In 50gr of water, dissolve the agar agar. In a pan put the chopped onion previously cooked with a little salt and pepper. Pour the agar agar and cook on a low flmae. Mix well, using a whisk and cook for about 10 minutes.
Make sure the agar is well dissolved, avoiding lumps. Finally, fill some muffin silicone molds or silicon (or ceramic) baking tins, with the pea creamy mixture.
